can the tascam p01 4 track record in stereo?

Have the left out go in track one, the right out in track 2.
Pan track one all the way to the left and track two all the way to the right.

That's how you do it with all cassette multi tracks.

but you have to have atleast 2 in to record at once.

As long as you sync it right you could record the left track on your first take, and the right on your second. maybe lead in with 4 qtr notes of hi hat on the first channel you record... then you have a count-off to help trigger the second channel recording in sync with the first.
