A small professional studio? Check out this link: http://www.tweakheadz.com/rigs2.htm
It gives a few suggestions, from budget rigs to full blown overly expensive almost-studios.

i multitrack into computers. i used version 2.1 of cool edit pro and a buncha plug-ins. old skool Emu sound card, fings running thru a yamaha mixer. pretty basic, but good results.
i don't like composing / producing on a pc, but i have no problem recording / editing on one.
hope that helps.
NOTE: the biggest issue i've found on stand-alone hardware multitrackers is that they only take 2 simultaneous inputs. i was looking around for 4 inputs, and the price goes up a lot. may not be an issue for you, tho....
