I'd call it a track mute. On ableton there are any number of ways you could do this. You could automate the volume for the channel(s) you want to cut out and then draw that automation into your arrangement. Or if you're triggering clips in session view, you could just stop those clips at a given time.
On the SP, it depends how you're building beats and again there are a number of options:
- build the beat by resampling. then you just trigger your samples whenever you want them and leave them out whenever you don't (or turn off the loop for a half a bar or whatever) and you can build that little gap or mute in the track while still having your drums or whatever running underneath.
- with the sequencer you could use the isolator or EQ effect and use the remain button to attach that effect to all the samples you want muted. then drop all three knobs to zero at will
On the SP-505 there is a 4-track sequencer so you can put certain loops or sequences in different layers of sequence that can be turned on and off, which makes this kind of muting a little easier than it is on the 404 or 303

On the 404 it is better to use the subsonic rather than the isolator for pauses and mutes...
You can also just literally cut chunks out of your beat in your DAW...
All my shit mostly is played live, if I make a mistake I might just cut the mistake out in logic and pretend like I did it on purpose by making it kinda as on time as possible and filling up the gap with a bit of an acapella or whatever. It makes for some interesting little parts that you don't expect
