so i usually just sample my drums in mono but i remember hearing or reading about a technique where you take a mono drum sound.

you resample it panned to the right, and resample it panned to the left.

you then resample those 2 sounds layered together.

was wondering if anyone used this technique and what kind of advantages you feel it brings?

This technique is used to create a stereo sample it's also used to creating thicker sounds...

It's really good on vocals (this is when i learned to do it)

1 copy center,a copy left and right and 2 other copies mid left and right. Now with live recording it works better because each take isn't going to sound identical. When Identical copies you are going to want to alter each copy a bit. This will give you final product a fuller sound.

Granted with drum sounds/samples you wont need to have soo many takes you can do a mid, right and left and be good

Or you could use the Haas Effect...

Use two of the same samples,
one panned hard left, the other panned hard right
offset one by 30-100 milliseconds...

Traditionally this is used to clear out the center of a mix...

You could also just use a simple chorus. It sorta does the same thing, except several times and varies the pitches of the 'doubles' if it's a stereo chorus.
