Just get the UNO chip. It's only like 10 dollars and it fixes the velocity problem. I put one in my FCB1010 and it works perfectly.

You can't do it with the Rolls because it doesn't send Midi Notes, only CC messages. You've got to get the Behringer FCB1010 isntead.

Not sure off hand, but look in the manual under connecting the 555 to a computer and changing the Signal Flow. One of those combinations will probably help you out.

there isn't a pause when switching effects but i think it's different than the 404sx. from the videos that i saw, the effects on the 404sx actually transition which would be a really cool feature to have. resampling can definitely take care of that though.
