editing previously recorded patterns

Hi,
Just got my sp-555 out of its box and had a play with it.
Realised it is possible to go back into a previously recorded pattern and overdub new notes and/or remove existing notes.
This is cool because you can build loops iteratively and add new stuff as you sample it.
I thought it wasn't possible as the led was out when you hit sample, but you can choose an older pattern anyway.
How did I not know this?
