I usually do... most of the time.

If I want things at different volumes, I change the volume of the sample, perhaps resample it to another pad and go from there.

I usually work with a headphone and can't quite stand it if I have to hit my machine at full force all the time. So yup... fixed velocity for me.

But.. perhaps I underestimate the value of variation in sound volume.. that I'm sometimes missing out on. I think in general not using 'fixed velocity' makes it sound more natural.

One exception though... getting 'shakers' to sound good, only works for me with 'fixed velocity' off.

i wish i had velocity sensitive pads... i use a 505 and the only way to get that effect is to mess with the amplitude in microscope edit.

^ for real? don't you miss the dynamics those beautiful velocity-sensitive pads give to a performance?

if i'm dropping loops in/out, then i always have Fixed Veloc selected (so all elements of the track are standard, ie to avoid dropping the bassline in at a low volume)

but for tapping out drum rhythms, basslines etc, i gotta have the variation allowed by non-fixed velocity

Lately I've been laying down straight backup beat ish to skratch over, so I want it all pretty much the same. If I was doing lead parts I'd take it off no doubt.
