The absolute easiest way to get started on creating custom triggers may be to get an Alesis Trigger/iO, or similar, and make controllers by connecting a 1/4" jack to any kind of switch that you want on your controller.

Pressure vs. Velocity
Although pressure and velocity can be set to do the same task, they can also be used in conjunction. Velocity is the amount of time from the pad being "not pressed" to being pressed as far as it takes to trigger. Pressure is how deep you push the pad down. E.g. I've had the SP-202 for the last 9 years. I started with an Akai S612, and I just recently picked up an SP-404 and an MC-808. I can really appreciate limited sampling time and lack of flexibility in a phrase sampler.
