Anyone know how I would go about sampling VHS?

Audio Out on the VCR to input of your sampler.
Just need the RCA cord to connect.

Unless you make a "pause tape" with just the VCR itself, no sampler. That would be dope!

It was a loooong time ago, but someone here mentioned using their VCR to record their tracks onto it. They mentioned it gave it a good sound with some compression. You could probably even record the video from what source you want, but just record the audio of your tracks.

I've mentioned recording to VHS but not sure if that was on here or another forum but people often don't realise that a 4 head VHS Hi Fi video recorder can actually record and play back near CD quality audio. 

I've used a VHS hi-fi deck as a mixdown deck for music projects in the past with some dope results. 

Well over 90db dynamic range and a 20-20K frequency response. 

The audio head spins against the tape offering a comparable tape/head speed of 80 ips. Most two track mastering reel to reel decks were 15 or 30 ips.
