it sounds like those vids are just chopping quarter notes and just rearranging them in a different order.
if you count out the beat with your hand for every down beat and count out 1-2-3-4. just hit record on the one and stop on the 2... hard to explain unless there is a video showing it
you can also just chop a bigger section after you sample it

ya sounds like you just need someone to show you in person.. there are a bunch of videos on how to chop on you tube
just search the classic "making a beat with (insert whatever sampler you have)"

some thoughts;

1. vid you posted , guy is mostly using HOLD on a drum loop usually, freeing up fingers to do the quarter note musical riffs.
2. timing can make or break
3. GATE the samples, and release the prev one right as you hit the next one
4. don't be afraid to sequence/quantize

Hey man this is real easy if you use your loop capture. get your sample on a pad, tap the bpm to get it set to the tempo you are working with. Turn on your metronome start recording on the one after the first upbeat stop the loop recording. There is your first quarter note. Save to pad. Now go to your o.g. loop hit play with metronome on second downbeat hit loop after second upbeat stop loop recording, save this to a pad and continue your process. There may b a easier way but this is how I do it you can chop sixteens pretty quick if you want to. But yeah loop capture. Hope this helps peace.
