I just purchased a 303 and found out how to edit a pattern.

Let us presume you record a Pattern and you put it on Pad 1 of Bank A. Now, to edit this pattern, simply make the same effort you made to record a new pattern, except choose the pad on which the pattern you want to edit resides.

So, for example, you make a pattern and put it on pad 1, as previously stated. Then, simply make sure PATTERN SELECT is lit up, press REC, and then press Pad 1, then record again. What should occur when you do this is the pattern should begin playing back exactly as you had recorded it earlier, only with the ability to record more beats onto it.

If this isn't clear enough, I'll make a video for you.
